Like many people, I was eating the Standard American Diet or SAD. Salt, sugar, and processed food was the norm, and this poor diet left me feeling not quite right. I decided it was time for Urgent Care. Walking was a struggle, felt a tingling in my feet, and a multitude of other issues that were presenting themselves; Type 2 Diabetes was my prognosis.
This was a wake-up call, and I scared as I was, my family doctor scheduled an appointment with a nutritionist. This meeting was a general informational session with questions regarding my background, with a demonstration of packaged and processed foods. They suggested what I could eat and could not eat, displaying one particular box and said, "These are really good. I have them for lunch all of the time."
After the appointment, I was puzzled, confused, and not quite sure what I was supposed to do with this information. "Are you kidding me I thought to myself-eat processed foods? What happened to eating real food?"
With prescribed medications, I was terribly sick that going to my 9-5 job just wasn't an option anymore. I needed another alternative. With my pursued continuing education and schooling in diabetes research, lifestyle and diet changes, I started to feel better.
One year later, putting my research to the test, the medication I was given was no longer needed! A follow-up appointment with the doctors confirmed my levels were normal and they couldn't fathom how this chronic disease started to subside. Food is medicine!
